Clod & Neck - Stew & mince

Shin - Sliced and packed in 500gm

Flank - Skirt, mince and stew

Thick Flank - Sliced braising 

Fore Rib - Joints of preferred size or ribeye steak packed in 2s

Sirloin - Joints of preferred size or sirloin steak packed in 2s

Rump - Steak packed in 2s

Fillet - Steak packed in 2s

All mince and stew packed in 500gms

Offal - trimmed portioned and packed


Pork

Pigs(carcasses up to deadweight of 90kg):

Standard Butchery:

Cheeks

Shoulder - Scored, boned, rolled and jointed into preferred sizes

Loin - One side, scored, chined and jointed into preferred sizes. One side chopped. Alternatively one side can be cured.

Belly - One side scored and jointed into preferred sizes. One side cut into belly slices.

Leg - Scored, boned, rolled and jointed into preferred sizes. Alternatively one side can be cured.

Leg Steaks from offcuts.

Hocks - Boned for sausage/mince or alternatively can be cured.

Trim - Some diced, rest minced or turned into sausages

Offal - trimmed portioned and packed
